Earlier this week I shared my famous lasagna recipe, and today I’d love to share one more of our family’s favorite dinner recipes ~ cheesy potato soup. Yum!
For this recipe you’ll need:
- 12 cups potatoes (peeled & cubed)
- 4 cups water
- 2 cups white onion (chopped)
- butter
- 1 family size cream of chicken soup ~ 26 oz.
- 1 soup can of milk
- 2 cups mozzarella cheese
*This recipe serves 10-12 people, so if you have a smaller family you may want to half the recipe.
First you’ll peel & cube your potatoes, & then you’ll put them in a large pan with 4 cups of water (or enough water to cover your potatoes). Bring to a boil & then turn the heat down & simmer.
While the potatoes are simmering sauté the 2 cups of white onions in butter until the onions are clear.
When the potatoes are just getting tender stir in the onions, 1 can family size can of cream of chicken soup, 1 soup can of milk & two cups of mozzarella cheese. Stir until the cheese melts & soup is warm & ready to serve.
Serve with sour cream, cheese & bacon bits & a salad. Then enjoy!
