Hello! How is your weekend treating you so far? We are busy, busy as usual. Today we are finishing up our deck in our backyard. Our sunroom building permit expires on Tuesday. Eek! So that means our final inspection is coming up quick! We are down to the last few things! Yay! With all of the remodeling going on around our house we’ve had a lot of nights where I’ve went the easy cooking route. ha! ;) Today I’d love to share one of these easy meals & a perfect summer recipe ~ an easy pasta salad. I seriously could eat this everyday. It’s so good! So keep reading to get the yummy recipe made with the best canned tomatoes around. :)
One of the reasons I think Hunt’s tomatoes are the best tomatoes around is that Hunt’s uses the flashsteam peeling method. No lye is used just water. Also Hunt’s tomatoes are taken from the field to the can within 10 hours. So they are packed fresh, & they are 100% natural with no preservatives. As a mom I really appreciate all of this. It’s really makes a difference in the taste & quality. So are you ready for the recipe? Let’s go! :)
For this recipe you’ll need:
2 cans Hunt’s Diced Tomatoes, drained & rinsed
1 can olives, sliced
1 package pepperonis, cut in fourths
1 green dell pepper, chopped
Vinaigrette Balsamic salad dressing
1 box Garden Rotini pasta (16 oz.)
olive oil
First you will cook your pasta as directed on the box. I always add a little bit of olive oil to my water. This keeps the noodles from sticking together later on.
While the noodles are cooking prepare your olives, green peppers, pepperonis, etc.
After the noodles are done rinse them. Let cool. Stir in the Vinaigrette Balsamic salad dressing. I used a little over half of the bottle. You can use more or less depending on how much extra flavor you want to give your salad. Then stir in your other ingredients. Cover & refrigerate for a couple of hours. Then enjoy! :)
