Tailgating Fajita Bar {recipe}

Hello! Are you ready for some football? I am! Annnd nothing says football more than a little tailgating before the game, right? ;) Today I am excited to be teaming up with Walmart & Kingsford charcoal to bring you a yummy tailgating recipe. This tailgating fajita bar is the perfect addition to your game day celebrations. So keep reading to get the yummy recipe! :)

We don’t have any football players this year, but I do have 3 kiddos in the band. My oldest plays tuba for the high school marching band & my 8th grade daughter is one of their band managers. She loves traveling with the band at their away games. Next week before our home game the band is hosting a tailgating party at the high school. This recipe is perfect for that! It makes a bunch, & you can feed lots of hungry people with it. Plus it’s pretty yummy! ha! :)

This recipe is adapted from this one.

For this recipe you will need:

marinade:
1 sweet onion, diced
2 teaspoons grated lime peel
3 teaspoons ground cumin
4 tablespoons Worchester sauce
2 teaspoons salt
1 teaspoon pepper
1 teaspoon dried oregano
5 tablespoons lime juice
1/2 cup olive oil
4 garlic cloves, minced
32 oz. beef broth

fajitas:
2 pounds sirloin tip steak*
2 chicken breast

*I bought thin sliced or you could go with a thicker cut. It’s up to you. :)

First in a large bowl mix all the ingredients for your marinade & stir. Set aside. Put meat in large pan. I had one pan for my beef & one for my chicken. Pierce the meat in several places with a sharp knife so the marinade can soak in. Pour about 3 cups of your marinade over the meat. So you’ll pour about a cup & a half over each one. Cover tightly with foil & set in the refrigerator. Wash hands. Then dice your vegetables up & put them into a large ziploc bag. Pour remaining marinade inside & seal. Put in the refrigerator for at least 4 hours or overnight. Turn occasionally. Warning: It will smell delicious! ;)

After your meat & veggies have marinated for at least 4 hours (overnight is best!) then it’s time to fire up the grill. :)

Kingsford Charcoal

We used some Kingsford charcoal & lighter fluid to get it going. After you light your charcoal & they have burned down a little close the grill & let it heat up. Then wait for your charcoals to turn white. Then you’ll know it’s time to start grilling. :)

Then we put our beef & chicken on the grill & the veggies, too. Cook until your meat is cook thoroughly & your veggies are tender. Watch closely you don’t want to overcook your meal. ;)

Walmart beef

I like to set up our fajita toppings buffet style ~ either on the back of the pick up truck (if we are tailgating) or on a picnic table (if we are at home). We call it a fajita bar. Everyone can pick & choose how to make their perfect fajitas. The kiddos really like making their own. :)

Some fajita toppings that we like to include: sour cream, corn, black beans (rinsed), salsa, cheese, olives, guacamole, chopped tomatoes, chopped spinach, cilantro, flour tortillas, corn tortillas, green onions

You can even set out a chalkboard sign listing all of the different topping ideas if you’d like. It looks really cute! :)

I also made some cute football water bottles. I just wrapped some brown construction paper around the bottles, glued it on & added some white vinyl for the strings. You could also use white duck tape, paper or a paint pen to do that, too. Too cute! :)
