Hello! It’s Friday! Do you have any big plans for the weekend? We are busy with the usual fall things like football & soccer games. I’m also hoping to sneak in a few projects in there, too! ha! ;) I love fall. There’s always so much fun to be had. A few week’s ago I was shopping at Walmart, & I spotted a brand new low calorie popcorn called Skinnygirl Popcorn. Don’t you just love the name? ;) I was so excited! If you know how much I love snacking on popcorn you’ll understand my excitement. :) I’ve been looking for some snacking choices with better ingredients, & I love, love popcorn. So it’s a perfect match! In a few week’s I’ll be hosting a girls night. I wanted to come up with a yummy snack to serve. I also wanted a skinnier version (of course!), & this popcorn is perfect! Today I am excited to share this skinny pumpkin & caramel popcorn recipe that will be perfect for your next fall party. So keep reading to get the recipe. :)
Skinnygirl popcorn is amazing! I bought two flavors ~ lime & salt and butter & sea salt. The lime & salt is my favorite! It gives you the indulgence of popcorn without the guilt, & it gives you so much flavor. Yum!
I love that this popcorn is package using mini bags that provide just the right amount of popcorn for a quick snack. Annnd the best thing is Skinnygirl popcorn offers such a great taste with just 25 calories per cup popped. 25 calories!!! That’s awesome! :) It’s a great snack for me to grab in the afternoon while the kiddos are eating theirs.
Now on to that skinny pumpkin & caramel popcorn recipe! It’s a good one. :)
For this recipe you’ll need:
4 bags of Skinnygirl Butter & Sea Salt popcorn
2 cups light brown sugar
1/2 cup light corn syrup
12 tablespoons light butter
1 teaspoon salt
1 teaspoon baking powder
3 teaspoons pumpkin pie spice
This recipe is adapted from this one.
Meanwhile on the stovetop in a sauce pan stir together the light brown sugar, light corn syrup, light butter, salt & 4 tablespoons of water. Stir & bring to a boil. Let it bowl for about 2 minutes. Remove from heat & stir in the baking soda & pumpkin pie spice. Then pour over the popcorn, stirring with a spatula until the popcorn is evenly coated.
Line a cookie sheet with parchment paper, spray lightly with cooking spray. Spread popcorn evenly on top. Cook in a 250° oven for one hour. Taking popcorn out every 15-20 minutes to turn with a spatula. Take out of oven. Cool. Break into pieces & enjoy. :)
