Hello! How has your Labor Day been? Ours has been busy! Whew! We are using our Labor Day to do just that ~ labor! ha! It’s nice to get a few things done around the house though. :) I’m also working on a ton of craft projects. I’m in charge of our church’s craft night in October. So I’m busy coming up with & making examples of all the crafts we are going to be doing. So fun! Today I am excited to bring you a yummy recipe with one of my favorite foods ~ California Ripe Olives. Yum! Even though we are super busy the kiddos have to eat, right? ;) Annnnd these yummy Monster Tacos are one of my kiddo’s favorite meals! So keep reading to get this delicious recipe that your family will love.

monster taco dinner #recipes

For this recipe you will need:
1 can California Black Ripe Olives black olives
1 can California Black Ripe Olives jumbo black olives
2 chicken breast, cooked & shredded
1 package taco seasoning
1/4 cup water
1 can of refried beans
1 avocado
1/2 cup salsa
2 tomatoes, chopped & diced
1 cup baby spinach leaves, chopped
1 box taco shells
candy eyeballs

Directions:
Cook & shred the chicken. Season the shredded chicken with taco seasoning & water. Stir. Simmer for 10 minutes. Warm up the taco shells in the oven for 3-5 minutes at 350° or until warm. Fill taco shells with meat mixture. Top with baby spinach, tomatoes, refried beans, avocado & salsa.

Once the taco shells are filled use the jumbo black olives to make the teeth of your Monster Tacos. Then use two regular sized California Ripe Olives for each taco to make the eyes. “Glue” two candy eyeballs to the black olives using some refried beans.

This dish will bring a smile to your kiddos faces! I know my kiddos are a little grumpy by dinner time from waking up so early & getting used to their back to school schedule. I know I can bring an instant smile to their faces when I serve these Monster Tacos for dinner.
