This post is brought to you by Cans Get You Cooking. I am so excited to be a Cans Get You Cooking Ambassador this year. #CansGetYOUCooking
Hello! How are you? How was your week been? Ours has busy! We are headed out of town for Spring Break this week! Eek! So we we have been doing a lot of packing & cleaning. Buuuut before we go I wanted to share this easy Peanut Butter & Chocolate Cups recipe that could not wait! It’s that good! ha! I love sharing how canned foods make homemade easy as part of my partnership with Cans Get You Cooking! I love cooking with can foods. Canned foods mean less prep and year-round availability, making healthy, homemade meals, desserts & yummy recipes a reality, a lot more often. One of the canned items I always keep stocked in my “cantry” is sweetened condensed milk. You never know when you’ll need to whip up a quick dessert for company or an activity. So I love having it on hand! So keep reading to see how I used it in these yummy peanut butter & chocolate cups. :)
For this recipe you will need:
- 1 1/2 sticks butter
- 1/3 cup sugar
- 1 1/2 cups all-purpose flour
- 1 package peanut butter & chocolate chips
- 2 large eggs
- 1 tsp vanilla
- 1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
First preheat oven to 350° F. Spray a 36 mini-muffin pan with nonstick cooking spray. Set aside.
Melt butter. Then mix the butter and sugar together in a small bowl until creamy. Add flour. Stir until it is evenly moist. Spoon 1 teaspoon of dough into each muffin cup.
Press the dough onto the bottom and halfway up sides of each muffin cup.
Next beat the eggs in bowl with wire whisk. Stir in sweetened condensed milk and vanilla.
Spoon mixture into each muffin cup. Fill them almost to the top.
Next sprinkle about 5-6 peanut butter & chocolate chips into each cup.
Bake for about for about 15 minutes or until centers are puffy and edges are just beginning to turn a golden brown. Take out of the oven & set on a wire rack to cool. Gently run a knife around edges of cookies to loosen them up from the pan. Leave in the pan. While they are still warm, top cups with a few more peanut butter & chocolate chips.
After about 10 minutes or so your peanut butter & chocolate chips will be nice & melted. Using a butter knife spread the melted gooeyness around! Yum! After cups are just about completely cooled sprinkle a few more peanut butter & chocolate chips on top. Remove from pan. Enjoy! :) {Recipe inspired by this one I found.}
I bet you can’t eat just one! They are delicious! :)
Remember a well-stocked pantry – your “cantry ” – will help you get through the week with creative meals & yummy recipes that you can feel good about serving your family and friends. Cantry Thursdays underscores the importance of one’s cantry and the role it can and should play on Thursdays – and every day of the week – to help get a nutritious, homemade meal on the table that you can feel great about serving.
By the time Thursdays roll around, most of your groceries have been used or have spoiled, and you’re tired from the long week and don’t want to spend a lot of time in the kitchen. The solution is NOT the takeout menu drawer or going out to eat…it’s your cantry. Nutritious, fresh and flavorful meals & desserts are achievable quickly and easily thanks to the canned foods in your pantry. Let’s get those cantry’s stocked up with staples like veggies, canned milk, chili, soup & meats! :)
