Hello! How are you? We had a busy weekend. Friday night we attended an Alex Boye concert. It was amazing! We also did a little yard work, & I did a little shopping at Target, too. I tend to visit Target a lot! How about you? ;) If you’ve been in the baking aisle at Target recently you might of noticed the brand new Pillsbury Purely Simple Cake Mixes & Frosting Mixes. (They also have cookie & brownie mixes, too!) I picked up a few a couple of weeks ago, & I decided to do a little baking for my son & his friends before the concert on Friday. This Strawberry Shortcake Cake was a huge hit. So keep reading to get the recipe! :)
Our family loves strawberries! We actually grew the strawberries that I used in this recipe. We have a little strawberry patch in our backyard. It produces a ton of strawberries every year. I usually make a ton of strawberry freezer jam. It comes in really handy for recipes like this one! OK….let’s get on with that recipe! ;)
For this recipe you’ll need:
Pillsbury Purely Simple White Cake Mix
Pillsbury Purely Simple Buttercream Frosting Mix
3 eggs
2 sticks of butter
1/4 cup of water
1 cup of milk
1 pint of homemade strawberry freezer jam, thawed (You can find my favorite no cook strawberry freezer jam recipe HERE.)
Annnnd did I mention why I love these new Pillsbury Purely Simple Mixes? Not only are they delicious & easy to make, but they also have no dyes, no preservatives & no artificial flavors. Yay! :)
This recipe is super easy. First, you’ll mix the cake mix with the eggs, milk & 1 stick of softened butter according the directions on the back of the box. Pour into 2 prepared 9 inch round pans.
Bake at 350ยบ for about 30 minutes. While the cake is in the oven mix the frosting mix with the other stick of butter & water according the package directions. Set aside. After the cake has finished cooking & has cooled mix about 1/2 cup of the strawberry freezer jam with the frosting. Then ice cake as usual.
Serve with fresh strawberries & a dollop of strawberry freezer jam on top. Yum!
This strawberry shortcake cake is now one of my family’s favorite desserts.
