I know I use tons of can foods in my cooking & love to stock my “cantry” with all kinds of can goods to cook my family’s favorite meals. Annnnd did you know that February is National Canned Food Month? Yes, it is! So to celebrate I am excited to share one of my favorite meals ~ Skinny Chicken Salad Wraps. Yes, a skinny version! Can goods definitely help me get through the week with creative, healthy & yummy meals that I feel good about serving to my family & friends. Using canned foods also mean less prep work (yay!) & year-round availability which makes healthy & homemade meals an easy reality in our house, more often. I love that! :) This recipe is one of our favorites. I decided to make a skinny version for an even healthier option. Just a warning this recipe makes a bunch. ;) So you can half it if you need to. It is the perfect recipe for large family gatherings, parties or to use in your kiddos’ lunches for the week.

For this recipe you’ll need:
(3) cans of Hormel Premium Chicken Breast, drained
(4) stalks of celery, chopped
(10) green onions, sliced
1/2 teaspoon pepper
4 tablespoons lemon juice
(6) hard-cooked eggs, chopped
1 cup no-fat mayonnaise
1/2 green pepper, chopped

baby spinach leaves

Hormel Chicken Breast

First you’ll put your drained chicken in a large bowl.

Pour in your chopped green onion.

Use a handy chopper or food processor to chop up the celery & green pepper.

Add the celery, green peppers & chopped hard boiled eggs to your bowl.

Add the pepper & lemon juice.

Add the mayonnaise & stir until combined.

Cover & chill in the refrigerator for at least an hour. Then I served my skinny chicken salad wrapped in a whole wheat wrap with baby spinach leaves. This is perfect for a healthy lunch idea. It would also be great for dinner! Yum!
