Good morning! It’s summer time. It’s super hot! Annnnd I think you already know the perfect way to cool off!Blue Bunny® ice cream! Ice cream is one our family’s favorite summer treats, and these Banana Split Cupcakes are a hit at my house. They are the perfect way to beat the heat, & they are the perfect summer recipe. So keep reading, I’ll show you how easy these are to put together. They’d be perfect for your next pool party or birthday bash. Just sayin’! ;) Let’s get started! :)
Recently I was in Walmart, & I noticed something different in the ice cream aisle. Can you spot the change?
Blue Bunny® has a new look! I’m loving the see through carton. It makes it easy to spy all the swirls & yummy ice cream add ins! While I was there I picked up some Blue Bunny® Homemade Vanilla (that I used for this recipe), Blue Bunny® Super Chunky Cookie Dough® & Blue Bunny® Rocky Road. It’s hard to pick just one!
Alright, let’s get to that recipe…..
To make these Banana Split Cupcakes you will need:
Blue Bunny® Homemade Vanilla
Smucker's Magic Shell Chocolate Fudge Flavored Topping or Smucker's Magic Shell Chocolate Flavored Topping
banana flavored cake mix
eggs
oil
sprinkles
cherries
First, you will bake your cupcakes as directed on the packaging. The only difference is that you will fill the cupcake liners 1/3 of the way full instead of the usual 2/3 of the way full. You want a little bit of space to put your ice cream. Let cool.
In the meantime, set your ice cream out so it softens. After your cupcakes are nice & cool, spoon softened ice cream onto the top of your cupcakes. Put in the freezer until set & ready to serve.
When you are ready to serve, break out the Smucker’s Magic Shell Chocolate Fudge or Chocolate, sprinkles & cherries. (FYI >>> Smucker's ice cream toppings are always an amazing way to add some fun to your summer ice cream recipes. I have an amazing collection in my pantry right now!)
Drizzle some of the Smucker’s Magic Shell on top, and before it hardens (You’ve got be quick!) put a cherry on top. After the chocolate shell has hardened, sprinkle on some goodies. Enjoy!
