Good morning! How was your weekend? Ours was pretty amazing! My parents are in town for the week. Yay! They rolled in Saturday afternoon, & we had a fajita cookout that night to celebrate their arrival. (Isn’t summer the perfect time for grilling & celebrating with friends & family?) This Chipotle Chicken Fajitas recipe that I used is amazing! It has quickly become a family favorite. It has just the right amount of rich flavor with just a hint of hotness. (Thanks to the El Yucateco Chipotle Hot Sauce!) I also have a deluxe grilling package giveaway for you, too! Eek! First, gather your ingredients. You’ll need:
marinade ingredients:
1 bottle El Yucateco Chipotle Hot Sauce (5 oz. bottle)
2 cloves garlic, minced
2 tbsp olive oil
3 limes, sliced
1/2 cup water
other ingredients:
3 lbs. chicken
16 flour tortillas
2 green bell peppers, sliced
1 white onion, sliced
3 avocados
salsa
baby spinach leaves
tomatoes, diced
First, you’ll put the chicken breast inside a large gallon size zipper sealed bag. I poked a few holes in the chicken breast with a sharp knife. This will allow the marinade to soak right in.
Next, I added the rest of my marinade ingredients (El Yucateco Chipotle Hot Sauce, minced garlic, olive oil, sliced limes & water). Notice the rich color & texture of the El Yucateco Chipotle Hot Sauce. I wish computer screens were scratch & sniff because the yummy smell was just as rich & flavorful. This marinade smells amazing! The El Yucateco Chipotle Hot Sauce is the perfect for this recipe. It is made from naturally smoked chipotle peppers (with NO artificial flavors!). It has a sweet smoky flavor, & it is great for grilling. I’m just warning you….your house will smell sooooo good! ;)
Next, seal your bag. Gently shake it around until your chicken is nice & covered with the marinade. Put in the refrigerator for at least 4 hours. (Overnight is best!)
When you are ready for dinner remove the chicken, discard the marinade & grill for about 20 minutes until done. Slice & serve on flour tortillas with sautéed green bell peppers & onions, diced tomatoes, baby spinach leaves & fresh guacamole. Yum!
