Hello! The holidays are upon us! Yay! I love, love this time of year! :) Today I am excited to be a part of a virtual progressive dinner with some other amazing bloggers. We are each cooking up good holiday recipes ~ main dishes, side dishes, appetizers, beverages & desserts. I’m bringing a dessert! :) I am so excited to be sharing this yummy Ooey Gooey Caramel Cheesecake recipe with you today. This is one our family’s go to holiday recipes. It is amazing! So keep reading to get the yummy recipe! :)
I have had this cheesecake recipes for years. I got from a friend who got it from a friend of theirs. Annnnnnd it is amazing! I love that you can change up the topping to fit just about every occasion & holiday. In the summer we use fresh fruit or strawberry jam as a topping. Buuuuuut during the holidays caramel is the topping of choice. Mix it with a little bit of chocolate dip when you serve it, & you will have a dessert that is sure to be a hit at your next holiday party! :)
Here’ s the recipe. :)
Crust
- 1 cup cinnamon graham cracker crumbs
- 3 tablespoons sugar
- 3 tablespoons butter, melted
Mix well and press into a 10 inch springform pan with a spoon. Set aside. I usually put it in the refrigerator while I am making the rest because it helps it to set up better.
Filling
- Three 8-ounce packages of Philadelphia Cream Cheese, softened
- juice from half a lemon (about 2 tablespoons)
Beat cream cheese and lemon juice in a large mixing bowl until soft and creamy.
Add
- 5 eggs (set these out when you begin so they will be at room temperature)
- 1 cup sugar
- 1/4 teaspoon salt
Beat on medium speed for 10 minutes ~ scraping sides of bowl often. Pour mixture into crust and bake at 350° for 45 minutes.
You’ll know it's done when you touch the center and it bounces back. When done remove to a wire rack and let stand for 20 minutes.
Meanwhile combine in a small bowl ~
- 1-1/2 cups sour cream
- 2 tablespoons sugar
- 1/2 teaspoon vanilla
Stir well and spread over cheesecake. Bake at 350° for another 10 minutes. Cool. Chill in refrigerator before removing from pan.
Topping
Pour one bag of Kraft Caramel Bits into a microwave safe bowl. Melt in the microwave, stirring often until melted.
Pour over the cheesecake while the caramel is still warm. Yum! :)
For some extra yumminess ~ melt some Baker’s Dipping Chocolates in the microwave as directed.
Then use it as a dip for your caramel cheesecake. Delicious! :)
