Hello! Isn’t springtime amazing? We are finally able to go outside again! Yay! The weather has been fabulous! :) I love all things spring ~ flowers, trips to the park, Easter, long walks, working in the yard & having lots of fun family time outside. Yes, outside not inside! Buuuut we still need to eat! ha! That is why I love the new Kraft Fresh Take meal kits that are available at Walmart. Kraft Fresh Take makes it so easy to prepare a yummy & nutritious meal for your family, and you will still have plenty of time left to do all that fun spring stuff! Yay! :) Recently I tried out a new meal on my family ~ Southwest Chicken, Cheddar Jack & Bacon Twice Baked Potatoes, Texas Toast & fresh green beans. They loved it! So keep reading to see how easy this meal was to put together. (I’ll also have a coupon for you, too!)
For this meal you will start out by cooking your potatoes. Wash your potatoes, prick the skin with a fork & wrap in foil. Bake in a 350 degree oven for about an hour & a half or until the potatoes are fork tender. After the potatoes are ready, put aside & start on your Southwest Chicken recipe below.
For the Southwest Chicken you’ll need:
1 package of chicken legs
2 packages of Kraft Fresh Take Southwest Three Cheese Recipe
small bowl of water
non-stick cooking spray
When you take the Fresh Take out of the cardboard packaging, the bread crumbs & cheese will be separated into 2 sections.
Undo the seal & gently mix the two together. It smells so good! :)
I didn’t take a picture of the next step. (Raw chicken & my nice camera don’t mix! ha!) You’ll dip your chicken legs in a bowl of water to dampen, & then place the chicken legs inside the Fresh Take bag. Zip shut. Shake to coat. Then place your chicken legs in a greased dish. Cook uncovered in a 350 degree oven for about 30 minutes or until chicken is completely cooked & has reached a safe temperature.
While the chicken is cooking….grab your potatoes! ;)
Carefully remove the insides of your potatoes, & put the insides into a large mixing bowl leaving the potato skin shells.
Then mix the potatoes, 1 1/2 cups of sour cream & 1 tsp. garlic powder with an electric mixer until thoroughly mixed together with no lumps. ;)
Then you’ll take one package of Fresh Take Cheddar Jack & Bacon Recipe. Mix the cheese & the bread crumbs just like you did for the chicken.
Refill the potato skins with the potato mixture & then sprinkle the Fresh Take on top. Put in the oven at 350 degrees for about 20 minutes or until heated thoroughly & cheese has melted.
Then serve! My family enjoyed this meal ~ especially my husband! I’m actually making it again this weekend for his birthday. This would also be a great meal to serve over Easter weekend. ;)
Since we were able to prepare our meal so quickly, we still had plenty of time to head to the park for an early Easter Egg Hunt! Yay! :)
